The reign of the great Louis XIV in France was full of luxury:
Versailles construction, performances, ballets, masquerades, and,
of course, Champagne. Right then the sparkling wines became a
symbol of the luxurious life of the royal court.
Louis XIV was also known as the Sun King (le Roi Soleil). In 1662
at the festive carnival cavalcade «Carousel of the Tuileries» he
appeared on a horse in the role of the Roman emperor, holding a
shield with the image of the sun in his hand. This meant that the
Sun protected the king of France and the France itself as the country-
successor of the Roman Empire. Louis XIV insisted on writing his name
in Latin, the language of the emperors - LVDOVICVS XIV.
The coronation of Louis XIV took place in 1654 in Reims, the capital of
Champagne. It was not surprising that the Sun King preferred sparkling wine
to all the other drinks, and each morning in Versailles began with the popping
of a cork.
Sparkling wine LVDOVICVS XIV is a dedication to the monarch worthy of his
majesty. It is made from grapes according to the traditional French Charmat
Method and has a crystal golden color. In a glass this wine plays with a million
pearl bubbles, gathering into thin threads. A wine which deserves to become
a favorite of the royal court.

The production of LVDOVICVS XIV sparkling wine consists of two stages of fermentation. Primary alcoholic fermentation is the process of converting grape juice into the wine, when the natural sugar contained in grapes is transformed into alcohol. And secondary fermentation is responsible for saturating still wine with carbon dioxide.
Carbon dioxide is formed during all stages of fermentation, but only at the second stage it becomes a key element of the production process of LVDOVICVS XIV sparkling wine – the main aim of the winemaker is the accumulation and retention of carbon dioxide in wine.
LVDOVICVS XIV sparkling wine is produced according to the traditional French Charmat Method, named after its creator, the French scientist Eugene Charmat. In the production process we use a steel tank, where the still wine is placed, yeast and grape sugar are added. The whole process takes place under pressure and temperature control. Hermetically sealed tanks allow to keep inside all the carbon dioxide released in the process.
After the end of secondary fermentation sparkling wine under pressure passes through a filter to get rid of sediment and is immediately bottled.
In this way, the wine practically does not spend time in contact with the sediment, that's why it is distinguished by fine aromas of flowers and fruits. These are light, bright wines for meeting with friends, parties and picnics.
